In the proposed combined sterilisation and concentration method, the o
riginal milk is first sterilised under conditions of continuous flow a
nd after reaching the desired sterilisation temperature the product is
concentrated by means of flash evaporation during subsequent cooling.
Addition of stabilisers to maintain the thermal stability of the conc
entrate during sterilisation is not necessary in this process. The met
hod presupposes that cooling with concentration is carried out under s
terile conditions. This is technically quite feasible on use of multis
tage flash evaporation.
