On the energy value of milk for sale in the town of Naples was previou
sly referred (2). The Authors refer now to the samples collected in th
e towns of Caserta and Salerno. Ninety milk samples (entire, partly sk
immed, and skimmed for each town) for sale in Salerno and Caserta were
collected for fat, protein and lactose determinations. The energy val
ue of milk was determined with calorimeter bomb and calculated by milk
components and Andersen's formula. The determination with calorimeter
bomb has lead to the development of an equation statistically valid t
o estimate caloric value based on fat percentage.
