A structural study of the sugars (D-glucose, D-fructose and sucrose) i
n aqueous solution has been achieved by FTIR reflection spectroscopy (
ATR). FTIR spectral analysis enabled us to make the most probable assi
gnments of the frequencies observed. A comparison of the mono- and dis
accharide spectra provided evidence for the conformational equilibrium
, the intra- and intermolecular interactions and the ''dimerization ef
fect'' on monosaccharide structures.
