Abstract
From their preparation to their destruction, emulsions raise a variety of challenging questions which are still far from being fully answere d. Besides the predominance of empiricism in controlling most of the a pplications, the basic understanding of emulsions is progressing throu gh well established concepts that emanate from the description of memb ranes, microemulsions or various other kinds of complex fluids.
