In order to lipophilise sugars, the various reaction parameters (influ
ence of the water, molar ratio of the substrates involved, quantity of
biocatalyst, and effect of temperature) of biocatalytic synthesis of
an alkyl-sugarether by condensation of a sugar and a fatty alcohol in
the presence of a limited aqueous phase and a beta-glucosidase were ex
amined. Octylglucoside synthesis was tracked as a function of time, an
d the effect on reaction efficiency of adding a surfactant to the reac
tion medium was studied.
