Ij. Church et Al. Parsons, MODIFIED ATMOSPHERE PACKAGING TECHNOLOGY - A REVIEW, Journal of the Science of Food and Agriculture, 67(2), 1995, pp. 143-152
Modified atmosphere packaging is becoming increasingly common. It has
been claimed that the technique enables significant shelf-life extensi
on but in so doing presents an increased public health risk. This pape
r reviews the literature relating to the scientific basis of these cla
ims. It demonstrates that shelf-life, sensory quality and safety of pa
ckaged products may be optimised only by harmonising a complex relatio
nship between product and process.
