Cells of Saccharomyces cerevisiae which are largely employed in Brazil
for ethanol production were used as raw material for crude glucan iso
lation. The preparation compares very well with others previously desc
ribed and was shown to be useful as a thickening agent. The final yiel
d (dry crude glucan/dried yeast cells) was about 12%.
