Dr. Singleton was selected by the Department of Viticulture and Enolog
y of the University of California and the American Society for Enology
and Viticulture to receive the 1994 Guymon Award. The James F. Guymon
Lectureship was established in honor of Guymon's contributions to tea
ching and research in the fields of brandy distillation and wine ferme
ntation science. Dr. Singleton's research at the University of Califor
nia since 1958 includes work on natural phenols, oxidation reactions,
and the effects of aging on wine quality. The text of his address, pre
sented at the 1994 Annual Meeting of the American Society for Enology
and Viticulture Anaheim, California (June 1994), has been edited for p
ublication.
