Soaking in dilute alkali, followed by drying at elevated temperatures,
was used to reduce the amount of assayable tannin in high-tannin sorg
hum. Sorghum tannin levels were reduced by up to 88% by treatment with
ammonium hydroxide (0.01-1 M) for periods of up to 20 days. Soaking a
nd drying temperatures between 25 and 50 degrees C were evaluated. Inc
reased drying temperatures decreased ammonia levels in the flour.
