Abstract
In the 1991-1993 period, an investigation on the main causes of reject ion of liver at meat inspection was performed in many different slaugh terhouses of the districts of Turin and Cuneo (Piedmont region, Italy) . The number of various hepatic lesions in beef, horse, sheep and goat was recorded and their incidence on the slaughtered animals was deter mined. Distomatosis is the main cause that makes bovine liver unfit fo r human consumption; in horse liver the main lesions are represented b y steatosis and parasitic lesions; also in sheep and goat the parasiti c lesions are the most important cause of rejection.
