Abstract
The shielded UV ray lamps make the ripening room environment completel y aseptic. They can be utilized For controlling the moulding process o f the product. Because of previous contamination, single colonies of m oulds can grow on casings not spread with selected conidia forming dar k spots. These spots are only antiaesthetic and are due to the growth of Debaryomyces hansenii yeast.
