Abstract
Hydrolysis of triolein in AOT/isooctane reversed micelles by an sn-1,3 -regioselective and a non-selective lipase were studied. Kinetics of t he multistep reaction: decomposition of tri-, di- and monoacylglycerol s and production of fatty acid were investigated separately. All the r eactions was found to obey the Michaelis-Menten model and the apparent parameters (Michaelis-constants (K-m) and maximal reaction rates (V-m ax)) were determined both for non-selective and regioselective prepara tions.
