In order to clarify the mechanism of the cycling phenomenon in a conti
nuous whipping system, the dynamic model has been developed. The model
involves the kinetics of whipping in the dasher and the flow characte
ristics of whipped cream in the discharge pipe which is connected with
the dasher. The whipping rate has been expressed by an autocatalytic-
type equation in terms of whipping index defined here using the firmne
ss of whipped cream. Numerical simulations based on the proposed model
lead to the conclusion that the cycling phenomenon is caused by the i
nteraction between the whipping rate in the dasher and the flow charac
teristics of whipped cream in the discharge pipe, because both are dep
endent on pressure.
