Abstract
Quality changes in Mullet (Liza corsula) and Pearlspot (Etroplus surat ensis) stored at ambient temperature and in ice were studied by sensor y, nucleotide and volatile base nitrogen analysis. The K-value increas ed linearly with storage time and appeared to be a good index of fresh ness for the two brackish water fish. Inosine monophosphate bears a si gnificant positive correlation with (P less than or equal to 0.001) fl avour score. Hypoxanthine increased exponentially with time and volati le base nitrogen showed a slow increase during the early periods of ic ed storage. Copyright (C) 1996 Elsevier Science Ltd.
