Quality changes in Mullet (Liza corsula) and Pearlspot (Etroplus surat
ensis) stored at ambient temperature and in ice were studied by sensor
y, nucleotide and volatile base nitrogen analysis. The K-value increas
ed linearly with storage time and appeared to be a good index of fresh
ness for the two brackish water fish. Inosine monophosphate bears a si
gnificant positive correlation with (P less than or equal to 0.001) fl
avour score. Hypoxanthine increased exponentially with time and volati
le base nitrogen showed a slow increase during the early periods of ic
