An overview is given of various biotechnical carbohydrate modification
s. Fermentation and bioconversion processes, based on carbohydrate sub
strates for production of mono-, di- and oligosaccharides and the micr
obial synthesis of various useful polysaccharides are discussed as wel
l as the microbial/enzymatic hydrolysis of polysaccharides into valuab
le oligomers or di- and monomeric sugars.
