A capillary zone electrophoresis (CZE) method is described for the ana
lysis of fish sarcoplasmic proteins at low pH. Aqueous extracts of eig
ht flatfish species, containing the sarcoplasmic proteins, were subjec
ted to the action of an electric field in a capillary electrophoresis
apparatus; the separated proteins were detected by means of an UV dete
ctor after less than 35 min. Acceptable resolution and reproducibility
were obtained using low protein concentration (0.1 mg/mL) in the extr
acts analyzed. The CZE protein profiles that resulted were specific fo
r each species and could be employed for differentiation and identific
ation purposes.
