Abstract
The Fat adds of large and small Fat globules of 7 homogeneous buffalo cows milk, halfwild bred in Caserta's area were analysed. The globules separation was obtained by centrifugation at different speed and temp erature. The methyl-esters of Fat acids were analysed by capillary gas -chromatography. Between the two kinds of globules, the fat acids show ed sometimes significant differences.
