It was established that during Acinetobacter sp. batch cultivation, th
e ratio of acylated and nonacylated polysaccharides in the composition
of the synthesized exopolysaccharides (EPS) changes, thus leading to
changes in the properties of their solutions. Nonacylated proteins are
formed mainly in the stationary growth phase, which is accompanied by
a decrease in the viscosity of the solutions of the synthesized EPS.
