Monolayers of a protein beta-lactoglobulin (BL) and two lipids distear
oylphosphatidylcholine (DSPC) and dimirystoylphosphatidylcholine (DMPC
) on aqueous subphase containing Na+ or Ca2+ ions are studied. The spr
eading isotherms and the ATR-FTIR spectra of LB plurilayers transferre
d, allow to deduce that alpha-helix conformation of beta-lactoglobulin
is the prevailing form. The study of bidimensional mixtures between b
eta L with DSPC and with DMPC shows that the components are incompatib
le at the W/A interface.
