Abstract
The atomic structure of N-[2-(hydroxymethyl)- 1,3-dihydroxy-2-propyl]a crylamic acid, C7H13NO4, is described. Three hydrogen bonds link the m olecules to form the crystal. Comparison with theoretical data support s the hypothesis that bitterness of the studied compound is related to the length of the hydrophobic chain.
