A method of obtaining chitin from mycelial fungi was developed. In con
trast to conventional methods, this method makes it possible to decrea
se (1) the number of consecutive acid/alkali treatment steps, (2) the
acid/alkali concentrations used, and (3) chitin degradation. Fungal ch
itin differs from other natural chitins in a number of physicochemical
properties and is species-specific in the realm of fungi.
