Possible use of carrot processing solid waste, as a carbohydrate sourc
e, for production of citric and lactic acids in solid state fermentati
on was explored. On the basis of fermentable sugar consumed, the yield
s of citric acid and L (+) - lactic acid from carrot processing waste
by fermentation with Aspergillus niger and Rhizopus oryzae were 36 and
55%, respectively.
