The browning reaction of rice, long grains type, parboilized in presen
ce of several levels of sodium dissulfite, was studied, through storag
e time. The color of rice grains was estimated photocolorimetrically i
n terms of reflectance per cent incident light. A statistical model wh
ich better represented the phenomenon was proposed.
