Selections from the professional activities of Albert Breuer and Geza
Semsey have been presented, emphasizing tuberculosis and cysticercosis
which were investigated by Albert Breuer in details. His studies on t
he veterinary judgment of meat in case of tuberculosis and tuberculini
zed animals (including also poultry) are very important (1912 to 1916)
, as well as the studies on the rating of meat in case of cattle with
a single cysticercus. Breuer used to teach the meat inspection since 1
906 and directed the slaughterhouses in the capital town between 1923
and 1930. Activities of Geza Semsey has been presented as the creator
of the Hungarian bacteriological meat inspection (between 1922 and 193
0), who dealt more and more also with the inspection of markets and st
ores after 1930. He was also the director of slaughterhouses in Budape
st (up to the 2nd World War). Of the actual food hygienic tasks, the m
eat inspectional jobs, the control of meat processing conditions (HACC
P), the prevention of human salmonellosis, the control and testing sys
tem of residues in food have been emphasized and briefly characterized
. The attention has been called up to the official food hygienic activ
ities, as well as to the necessity for a collaboration between the hum
an and veterinary food investigation institutions.
