Abstract
Protein concentrates result from the extraction of undesirable compone nts from defatted oleaginous flours. The present study was conducted t o optimise at laboratory scale the production of concentrates from a g landless cottonseed flour of African origin. The optimized processes w ere then scaled-up in a pilot-plant. Undesirable components (alpha-gal actosides and pigments) were extracted with acidulated water (pH 4 or 5) or ethanol-water mixtures (40:60 to 80:20 v:v at pHs ranging betwee n 3 and 7) at 20 or 45-degrees-C. Ethanol-water mixtures (particularly 60:40 and 70:30 v:v) were more efficient than acidulated water in rem oving pigments. They gave greater yields of concentrates; conversely, better functional properties were obtained in water-processed concentr ates.
