Abstract
The effect of malolactic fermentation (MLF) on the flavor of 5 young w ines was studied by discriminative tests and descriptive analysis. The differences between MLF and non MLF wines were due to a lower acidity level of MLF wines. Flavor of these wines was very little modified by MLF. When MLF and non MLF wines were adjusted in malic and lactic aci ds, their acidity was still judged to be different.
