Dynamic headspace analysis (DHA)/GC/MS was used to recover and identif
y some 33 volatile compounds from commercial whey protein concentrate
(WPC) subjected to accelerated storage. Four adsorbent traps, i.e., Te
nax TA, Tekmar No. 8, and Vocarb 3000 and 4000, were evaluated for the
ir ability to recover volatile compounds from commercial whey protein
concentrate after 8 d of accelerated storage in the dark at 55 degrees
C. Tenax TA was most effective for recovering esters, aliphatic hydro
carbons, and aromatic hydrocarbons, and Vocarb 3000 was most effective
for recovering alcohols, ketones, and furans.
