The reaction conditions for gamma-CD production by a purified CGTase f
rom Brevibacterium sp. No. 9605 mere investigated. The optimum pH and
temperature for gamma-CD formation mere 7.0 and 50 degrees C, respecti
vely. The addition of calcium ion increased heat stability of the CGTa
se and the CDs formation was affected by the concentration of calcium
ion. In the presence of ethanol, the yield of gamma-CD from soluble st
arch was increased.
