The transglycosylation reaction of partially purified beta-glucosidase
from sesame seeds with cellobiose is described. Sesame beta-glucosida
se was partially purified by ammonium sulfate fractionation and gel fi
ltration. The molecular weight of the enzyme was 200,000 by gel filtra
tion. Sesame beta-glucosidase showed strong transfer activity to synth
esize the trisaccharide from cellobiose. The optimum pH and temperatur
e of the transglycosylation reaction were pH 4.0 and 60 degrees C.
