Abstract
It has been verified the microbiological aspect of the ''mozzarella ch eese'', packed in sealed food-containers and in holed envelopes. The m icrobiological data found out have been correlated with whey. A defini tely higher bacterial charge and a constant presence of environmental microorganisms have been found our in the products packed but not seal ed up. The results are considered in relation to the Italian rules, an d in particular to the Circular n. 136/89 of the Ministry of Trade, In dustry and Handicraft.
