Abstract
Colour, types of colour and their progress through beet sugar manufact ure are outlined. Distribution of colour in the crystals, and factors that affect colour development in storage are described. Odour in suga r, and odour development in storage are discussed. Types of odour, rel ated to beet and to the process, are outlined, and causes and cures fo r each are examined.
