Sugars impart a pleasant, appealing taste to foods and contribute to t
he textural and handling properties characteristic of certain foods. H
owever, investigators have raised several concerns about the potential
health effects of excess sugars consumption. The purpose of this work
shop was to critically review the literature; to evaluate newer inform
ation, especially that available after the 1986 Food and Drug Administ
ration report on sugars, which provided a very thorough evaluation of
sugars consumption and health; and to identify new directions for rese
arch. I present a summary of these issues. It is clear from the papers
presented here that a considerable amount of new information is avail
able that will enable us to more fully understand the association betw
een intake of sugars and health.
