Abstract
Efficient use and reuse of energy leads to lower processing costs per product unit. Methods of reducing energy costs in dryers and ovens are discussed, and two specific techniques, tempering and simulation, are described. A general heat and mass transfer model incorporating gelat inisation for wheat doughs is used to illustrate points.
