A study of cider dealcoholisation by supercritical extraction with car
bon dioxide using pilot-plant-scale equipment has been carried out. Th
e effects of pressure, temperature and solvent to feed ratio have been
examined. Supercritical and liquid carbon dioxide have been used to e
xtract ethanol and aromas from cider at pressures of 80-250 bar and te
mperatures of 20 and 40 degrees C.
