Differential Scanning Calorimetry of W/O/W multiple emulsions maintain
ed at subambient temperatures has pointed out a water transfer from th
e inner undercooled water phase towards the outer frozen aqueous phase
. The water fluxes have been expressed considering irreversible thermo
dynamics applied to the emulsions pictured as liquid membranes. The va
lues of water transfer diffusion coefficients deduced from a solution-
diffusion water transfer mechanism are in good agreement with predicte
d values from the Stocke-Einstein Equation.
