This paper describes the results obtained during the investigation of
56 samples of marine fishes belonging to the most current species. All
samples were submitted to microbiological assay and to chemical analy
sis (ABVT, histamine). Analysis were performed with samples maintained
at ambient temperature during 32 hours. The results demonstrated that
the fishes reached to thresold of reject after 8 hours. The experimen
tal data showed a linear correlation between the level of alteration a
nd both bacteriological numerations and chemical analysis (ABVT and hi
stamine concentrations). However this linear relation appears in two p
hases before and after the thresold of reject. On the other hand, our
results clearly demonstrate the presence of faecal colibacillus from h
uman origin. Finally our experiment underline the interest and limits
of each criteria.
