Abstract
Fatty acids are a major source of lipids in the diet. Dietary fatty ac ids are able to significantly influence the concentration of serum cho lesterol and thereby influence the risk of atherosclerosis. This brief review on fatty acids will present information on the structure and n omenclature of fatty acids, the metabolic pathways for fatty acids in cells, and the influence of dietary fatty acids on serum cholesterol l evels.
