Abstract
Curcumin, demethoxy curcumin, bis demethoxy curcumin and diacetyl curc umin inhibited nitrite induced oxidation of hemoglobin in both erythro cytes and purified human hemoglobin. The activities of all the compoun ds except diacetyl curcumin were similar suggesting that the methoxy s ubstituents have very little role in this biological activity. Acetyla tion of phenolic groups resulted in significant reduction of activity.
