Abstract
This article reviews, in brief, the important industrial uses of starc h and starch processing in industry. The other aspects discussed inclu de the main enzymes involved in starch degradation, commercially avail able amylolytic enzymes, thermostable enzymes from mesophilic and ther mophilic microorganisms, microbial fermentation systems used in amylol ytic enzyme biosynthesis, amylolytic yeasts in ethanol production from starch, and amylolytic ruminal organisms.
