Abstract
An allergenic peptide was isolated from the chymotryptic hydrolysate o f gluten by gel filtration and HPLC. The primary structure of the pept ide was determined as n-Gin-Gln-Pro-Pro-Phe-Ser-Gln-Gln-Gln-Pro-Pro-Ph e. The amino acid sequence similarity shows that the peptide originate d from it low-molecular-weight glutenin chain.
