Some properties of kojic acid glucoside were compared with those of ko
jic acid. As for antibacterial activity and tyrosinase inhibitory acti
vity, those of kojic acid glucoside were less effective than those of
kojic acid. As for chelation with Cu2+, Cd2+, and Co2+, the overall st
ability constants of kojic acid glucoside and kojic acid were very sim
ilar. Furthermore, the stabilities of kojic acid glucoside and kojic a
cid against light and heat were investigated. Kojic acid glucoside wer
e more stable than kojic acid against light and heat about 2.5 and 5 t
imes, respectively.
