The aim of this work was to compare calcium sequestering behaviour of
eleven carboxylic acids derived from carbohydrates, and to study the m
olecular structure influence on the calcium complexation. For this pur
pose, various carboxylic acids derived from methyl D-glucopyranoside,
methyl D-fructopyranoside and methyl D-fructofuranoside were synthesiz
ed and studied using an ion selective electrode to determine calcium c
omplex formation constants. Complexation sites of carbohydrate skeleto
ns were determined using C-13 NMR.
