Abstract
An alternative approach to the finite element method has been develope d to simulate freezing and thawing processes in irregular two-dimensio nal systems. A code employing boundary-fitted grids (BFG) was implemen ted in a numerically conservative form (control volume formulation). T he proposed model was satisfactorily checked against experimental data obtained with minced meat and Tylose. The accuracy of the BFG method is similar to one obtained by finite elements but shorter computer tim es and simpler codes were employed.
