Abstract
The causes of surface yellow colouring of Taleggio cheeses have been s tudied. The responsable bacteria has been identified as Corynebacteriu m flavescens. When this bacterium develops with Geotrichum candidum, i t produces an orange-pink colour on the surface of Taleggio cheeses.
