At low concentrations of partially purified fructosyltransferase, only
trisaccharide products were detected. At higher enzyme concentrations
, larger oligofructans were detected. Depending upon enzyme concentrat
ion, the results indicated either sucrose:sucrose fructosyltransferase
activity exclusively, or a more complex fructan polymerizing system.
Consequences for the interpretation of fructosyltransferase data are d
iscussed.
