The microbial polysaccharide xanthan was studied theologically as well
as in its behaviour in the flow through a packed bed of spheres. Corr
ecting for shear, the remaining non-viscous increase in resistance sta
rts at stress levels which in viscometric flows elastic effects (first
normal stress differences) start to dominate viscous ones (shear stre
ss).
