Abstract
A survey of the thiamin contents of flour and bread and the moisture c ontents of bread sold in Melbourne and selected suburbs demonstrated a high level of compliance with the Food Standards Code with respect to thiamin content of white flours but not of wholemeal flours. The mois ture contents of breads complied with former maximum regulatory limits , which were removed in 1992.
