A study regarding the chemical composition of the main parts of ripe f
ruits from Licopersicum esculentum, var. cerasiforme Alef. is presente
d. Fruits harvested at the province of Corrientes (Argentina) were com
posed by peel (9.25 %), seed (1.32 %) and pulp plus an aqueous solutio
n probably of mucilage and pectic substances (89.43 %). It has been es
timated that this solution represents 17.52 % of total fruit. Whole fr
uit contains 417 mu g of beta-carotene % g (696 UI of beta-carotene) a
nd 18.8 mg % g of ascorbic acid plus dehydroascorbic acid. Values of c
omposition are presented for pulp, seed and pulp plus peel.
