A rice mutant line, 85KG-4, having a low content of salt-soluble 16kDa
allergenic protein was used as a material for preparing hypoallergeni
c rice by enzyme treatment. Infiltration of salt solution containing d
etergent and washing with running water of polished rice grains of 85K
G-4 resulted in a decrease of 16kDa sal-soluble protein to about the s
ame content as commercially available hypoallergenic rice, which has b
een evaluated as effective in avoiding allergic reaction in patients.
Reduction of total salt-soluble protein in 85KG-4 to the level of the
hypoallergenic rice was achieved by treatment with one-fifth the amoun
t of Actinase AS used for production of the hypoallergenic rice. These
results suggest that use of 85KG-4 will make it possible to lower rem
arkably the costs of producing hypoallergenic rice.
