This paper presents a finite element analysis of the process of freeze
-drying in a coffee sample. The numerical model which has been develop
ed was based upon the Luikov system of partial differential equations
which calculates the distribution of temperature, moisture potential a
nd pressure within a capillary-porous body. The position of the frozen
/dried interface is calculated from the temperature gradients either s
ide of the sublimation front within the coffee sample.
